Espresso Honey Cookies
Ingredients
2 eggs
2 tsp. vanilla
1/3 c. espresso infused honey
2 tsp. espresso coffee
1/3 c. melted butter
2 c. oat or almond flour
1/2 tsp. baking soda
Instructions
Preheat oven to 350ºF
Whisk the vanilla and eggs in a bowl.
Add honey, espresso, and melted butter to the bowl. Whisk.
Add flour and baking soda. Stir the mixture with a wooden spoon.
Line a cookie sheet with parchment paper. Scoop dough onto sheet a few inches apart and flatten with spoon.
Sprinkle with chocolate chips or desired topping.
Bake for 10-15 minutes.
Cacao Brownies
Ingredients
3 eggs
1/2 c. butter
1/2 c. raw honey
1/4 cup water
1 tsp vanilla
1/2 c. almond or whole wheat flour
1/3 c. cacao powder
1/2 tsp baking powder
1/4 tsp salt
1/4 c. dark chocolate chips (optional)
Instructions
Preheat oven to 350ºF and grease an 8”x8” pan
Whisk eggs, butter, and vanilla in a medium bowl
Add and stir in the remaining ingredients
Bake for 15-20 minutes, until done
Take out and let cool
Italian Shortbread Cookies
Ingredients
3 eggs
1/3 c. coconut sugar
1/3 c. raw honey
1 c. unsalted butter
1 1/2 c. whole wheat flour
1/2 tsp. salt
1 tsp. almond extract
1/2 tsp. vanilla extract
chopped pecans
Instructions
Preheat oven to 350ºF
In a large mixing bowl, combine egg yolks, butter, coconut sugar, raw honey, almond extract, & vanilla extract. Beat at medium speed until creamy.
Gradually add flour and salt. Mix at low speed until well blended.
Cover and refrigerate dough for 1 hour.
Roll dough into 1-inch balls. Dip dough into egg whites and roll in pecans until coated. Place on cookie tray.
Press thumb into dough and fill indent with jam.
Bake for 15 minutes or until edges are lightly browned.
Honey Pecan Cookies
Ingredients
1/2 c. room temp. butter
1/3 c. raw honey
1 tsp. vanilla extract
1/8 tsp. salt
1 c. whole wheat flour
3/4 c. chopped pecans
Instructions
Preheat oven to 350 °F.
With an electric mixer, beat butter in med bowl for 1 min.
Add raw honey and beat for 1 min.
Beat in vanilla, salt, and flour until dough comes together. Fold in the pecans.
Roll into balls, place on cookie sheet. Gently flatten each ball of dough.
Bake for 15 minutes or until edges are lightly browned.
Let cool & enjoy with jam or more honey!
Honey Nugget Candy
Ingredients
1/2 c. honey
1/2 c. brown sugar
1/4 c. unsalted butter
Instructions
In a small saucepan, melt the honey, sugar, and butter. Boil for a few minutes until thick.
Pour onto a buttered plate and cool for a few minutes until set.
Scoop and roll into balls when cool enough to not burn your hands.
Leave to harden overnight.
